 Problems with older techniques?

I've been off the web at work for several years, due to office politics.  I do the website, BTW.  With no access to modern techniques, I've been doing everything  at about 2003 standard.  However, this turns out to be a benefit, now that wireless is maturing.  Using plain HTML and JavaScript and simple CSS means that the entire site runs on just about anything, without major glitches in appearance (most pages are designed to stretch smoothly) or function.  So, why NOT use tables and all that old tech, if it is working, while cutting edge designers are pulling their hair out trying to satisfy hundreds of different platforms?
